AB Hotels Group has specified a Mibrasa oven and Moretti Bakery Tower as core features of a major kitchen refurbishment programme at its popular Sopwell House Hotel.
The project at the St Albans hotel has seen the existing shell of the main taken back to bare walls.
The Mibrasa is the first charcoal oven to be fitted in the hotel’s main kitchen. Set on a cupboard unit with a resting rack above providing a complete workstation, it has been positioned on the main cook line alongside other items of prime cooking equipment. The set-up enables the kitchen brigade to produce a varied and exciting menu.
The Moretti Bakery Tower, meanwhile, consists of a bakery convection oven, a stone based deck oven and a proving cabinet. The Moretti unit provides the kitchen staff with a complete solution for all their patisserie and viennoiserie production.
AB Hotels procurement manager, Nicholas Smith and executive head chef Gopi Chandran, visited Ascentia as part of their selection process and spent some time at the company’s development kitchen led by Scott Park.
Park, commented: “We invested time exploring the versatility of the ovens demonstrating its flexibility from Seafood and meats to vegetables and desserts. It was important the client understood the operational capabilities of the ovens enabling them to make an informed decision’’.
