Carpigiani gives restaurant portfolio a turbo boost

Carpigiani has added to its portfolio of appliances by launching the Turbomix, a high-powered blender and homogeniser designed for making homemade ice cream mix.

Ideal for preparing all sorts of mixes used in the production of gelato and sorbetto, the Turbomix can whisk, blend and emulsify to allow chefs to create homemade mixes.

In addition to ice cream base mixes, chefs can use the Turbomix to create a smooth and consistent texture to a number of other confectionary products, including pastry cream, fruit purees and emulsions, while the optional cutter attachment makes the chopping of large fruit such as apples and pears simple yet highly effective.

A powerful 12,000rpm motor and variable speed control enables the operator to select the programme best suited to their desired mix. The Turbomix can produce five litres of smooth pastry mix in just 30 seconds, dissolve ingredients into cold water or milk for a guaranteed quality ice cream base in approximately 60 seconds or a completely emulsified mix from single ingredients in just 120 seconds.
