Dabbous site revamped to host French-inspired restaurant

The former manager and co-owner of Michelin-starred Charlotte Street’s Pied á Terre has acquired a London property to launch his flagship solo restaurant.

Mathieu Germond, who was at the French restaurant Pied á Terre for 14 years, will transform the Whitfield Street property into Noizé

The restaurant decor and menu will take influence from France’s Loire Valley, where Germond grew up, and will focus on simple, seasonal ingredients.

The kitchen will be led by former head chef at Pied á Terre Ed Dutton, who worked at the Pied Nus pop-up with Germond. As well as Germond and Dutton Pied á Terre owner David Moore is also set to join Noizé.

Davis Coffer Lyons, which acted for the vendor Ollie Dabbous on the sale, noted that the site’s lease secured a six figure premium and includes both the ground floor and basement.

Germond purchased the site, which was recently vacated by Dabbous. Ollie Dabbous and Oskar Kinberg announced the closure of business earlier this year, and announced they would working of a  project due to launch in 2018.
