Chef director, John Branagan, remains a loyal and important member of the senior team, dealing with all aspects of food within the businesses and leading the teams of head chefs that manage its kitchens on a day-to-day basis.

The company has a strong commitment to food development, which affords John the luxury of working with the development chefs in design, creativity, costings and implementation of its food offerings, while his forward-thinking approach to kitchen planning has seen it introduce the latest energy saving systems to its sites.

At The Trading House in Glasgow, for instance, wasted heat from the kitchen is used to create a hot water supply for the whole bar and restaurant, while at other sites it is used to power under-floor heating, radiators and heating troughs.

John says that such innovations are vital to reducing carbon emissions and utility bills. “Ignoring the solutions available to manage and utilise wasted heat was simply not an option,” he says.
