New burger concept has nationwide ambitions

A couple who are due to open a “first-of-its-kind” gourmet burger restaurant in Shrewsbury next week ultimately hope to turn the brand into a nationwide concept.

Adam and Kelly Lyons are fulfilling a lifelong dream by launching their first ‘Lyon’s Den’ burger bar next week after investing more than £100,000 in the project.

The outlet will specialise in gourmet burgers and made-to-order milkshakes, and aims to attract a family audience that want good food from an “unpretentious” menu.

The couple intend to put a British spin on a classic American dish, after gaining inspiration from a driving holiday across the US.

“Everything is homemade here and we only use fresh, locally-sourced ingredients as Shropshire has so many great food and drink producers, so our menu has a very low carbon footprint,” Kelly told Shropshire Live. “We have put our hearts and souls into this venture and the official opening on November 3 will be especially poignant for us as we have invested in it using a legacy from my parents, who sadly both died in recent years. Their memory will be kept alive by this building.”

The pair have ambitious plans to take the Lyons’ Den brand nationwide if the launch goes to plam. “Shrewsbury is our home, but one day we’d love to have our burger restaurants in every town and city in the UK. All with the same ethos – using fantastic local produce to make great burgers for the best price,” Adam said.
