Barnes has a wealth of significant multi-site operational experience and will be an important addition to the ambitious company culture, which constantly strives to find innovative ways to enhance its guest offering and experience, the brand said.

It is hoped the appointment will strengthen Darwin & Wallace’s ability to be nimble operators in a highly competitive market place with the resources to deliver against its original ideas.

Barnes joins Darwin & Wallace with more than 15 years experience in the hospitality industry working with leading and progressive businesses. Having completed over five years with Wagamama when it consisted of 30 sites, she completed her tenure with them as head of training before embarking on an operational career with Canteen and then joining Byron as a regional operator.

Mel Marriott, Darwin & Wallace, managing director, commented: “I am very happy to welcome Polly – it is a testament to our existing team that we have managed to achieve so much in the last four years. Polly’s energy, experience and enthusiasm mirrors ours and will make a formidable addition.”

Meanwhile, Barnes commented on her appointment: “I am fortunate here to be surrounded by people who share a genuine passion for what we do, and I’m thrilled to be joining a very successful and dynamic business and I am looking forward to a long and successful future with Darwin and Wallace.”
