After 10 years with Greene King and 13 years with Hardys & Hanson before that, it’s fair to say that David George knows his way around a pub kitchen.
With a focus on menu content and menu design, as well as ensuring sites are properly equipped to deliver a food offering, David’s appointment as head of catering development has proved to be an inspired move by the Derbyshire chain.
Around 60% of the 50-strong group’s estate currently offers food and in some of the pubs where the menu has been improved and the equipment upgraded, the revenue from food has increased by as much as 30%.
Durability is a key purchasing criteria for catering equipment buyers in the pub sector, and David is no different.
“Longevity and consistency are really important to us,” he says. “And again, just from using my 10 years at Greene King I know what companies there are and I know what appliances there are and I am able to cherry-pick. I am not a guy who will suite a kitchen in one brand, I believe in really cherry-picking the right appliance for the right fit.”
