Taking on the Costas, Starbucks and Prets of this world might sound like an insurmountable task but it certainly isn’t fazing SOHO Coffee & Co., one of the hottest names in the market right now.

With another dozen stores planned for 2018, and a burgeoning presence in London having previously resisted the Big Smoke, the company’s capital expenditure on kitchen equipment is growing in equal measure.

This is certainly keeping head of innovation, Duncan Reilly, busy as he looks to ensure the company’s in-store kitchens dovetail with the offering supplied by its CPU.

The purchase of new Merrychef ovens and SpidoCook panini grills has made an enormous difference to the pace with which staff can turn around orders and brought some much-needed consolidation to what was previously a fragmented equipment estate.

“We’ve grown over the years and we’ve acquired different equipment in different stores and it starts to get a bit messy,” reflects Duncan. “We’ve concentrated on trying to standardise that equipment. One of the things we were very keen on looking at was improving the speed of service and consistency of the product.”
