Paul Kitchener has seen his role at the chain expand following his success at Ansty Hall in Coventry and is now looking after Macdonald Hotels’ culinary proposition for all of its sites across the Midlands.

Described by his seniors as an “exceptional” chef, Paul’s new position gives him the scope to use his vast experience and skills to develop new menus and ideas that can be implemented across multiple properties.

On his vision for the menus, he says: “At Macdonald Hotels we have the luxury of creating the majority of our own menus to reflect the individual hotel’s identity and creativity of the chef. I am hoping to introduce even more local dishes and work with each chef to encourage them to express their individuality from their kitchens.”

As a forward-thinking hotel group, Paul is also helping to ensure that sustainability and local sourcing remains central to its kitchen philosophy.
