POWER LIST 2018, MARKET MOVERS: Tom Mullin, Executive Chef, Pizza Pilgrims

With a long-held mission statement to serve the best Neapolitan pizza on the market, Pizza Pilgrims is always on the hunt to find new ways of giving itself a competitive edge in what has become a fashionable sector.

This year has seen the chain embrace new technology and applications to run its kitchens more efficiently and safely, allowing it greater control of areas such as food safety and stock control. 

“We have tried to limit the amount of paper on clipboards in the kitchen by having a shared cloud of information in each site which holds all our H&S documentation. Stock ordering and counting is also done on an app,” explains executive chef Tom Mullin.

Next on the agenda for Pizza Pilgrims is further menu enhancement as it seeks to create a winning food proposition heading into 2019.

“We have begun with a first phase of development in our new site opening in the City and will continue to review and update different areas of the menu, as well as the development methods for which we train such a number of chefs across the board,” outlines Tom.

“We’re always seeking to be a step ahead and taking on as many projects as possible, to keep us challenged and on our toes. But it’s equally important to know where the limit is and when to focus on what you have.”
