Rational raises a glass after 105 of its combis are used to feed Oktoberfest dwellers

Rational has revealed that it supplied 105 combi steamers for this year’s Oktoberfest festival in Munich as part of one of the largest temporary kitchen projects its head office is involved in.

Millions of visitors flock to southern Germany ever year for the 15-day festival and this year the event was supported by no less than 10 festival tent kitchens.

Rational’s application advisor, Michael Lorenz (below), headed up the project, which also saw 10 VarioCookingCenter units deployed. All of the company’s equipment was in operation around the clock. 

Mr Lorenz is in charge of supporting the organisers during the event, but also year-round at their restaurants.

As early as in the spring, they discuss the menu for the Oktoberfest and plan how the Rational appliances will be used.

The Bräurosl, a festival marquee with a very rustic exterior built with wooden planks, is one of the main foodservice areas. It is headed by chef Pascal Heide-Nigg, who has spent several years making sure the 12,000 meals that leave the temporary kitchen daily are of the desired quality.

This year, Mr Heide-Nigg prepared dishes such as Sauerbraten marinated braised beef, Knödel dumplings and Kaiserschmarrn shredded sweet pancake in the VarioCookingCenter, and the roast pork and duck in the SelfCookingCenter. In order to manage the large quantities, he used the overnight cooking function in both units.

6.3 million people attended the Oktoberfest this year.
