The White Brasserie Company, part of Brasserie Bar Co, is set to open its 17th site, the Boot in Histon in Cambridgeshire in February 2018.
The opening is part of The White Brasserie Company’s plan to roll out 20 pubs over the next three years.
The business is the sister brand to Raymond Blanc’s well-known high street dining chain, Brasserie Blanc.
It has been reported that the Cambridgeshire village pub was vacant for nine months before the French chef transformed it into a 123-cover restaurant, complete with a bar and outdoors space, as well as the main dining area.
Brasserie Bar Co chief executive Mark Derry said: “We’re looking forward to opening our 17th site in historic Histon. The pub is full of character and we have gone to great lengths to restore many of the original features in the building as well as creating an impressive new extension. We look forward to welcoming people into the pub towards the start of February.”
The site has had an extensive renovation to enhance its original period features including original brick arches, beamed ceilings and an inglenook fireplace, additionally a new green oak beamed extension has been added, with a cedar clad on the exterior.
