Sopwell House makes menu feature out of ‘versatile’ charcoal oven

Luxury Hertfordshire hotel Sopwell House has put charcoal cooking at the heart of a new brasserie open kitchen it has opened.

The venue has opted for a Mibrasa charcoal oven, supplied by Ascentia Foodservice Equipment, which has a heating rack designed for a 110-cover restaurant.

Sopwell House has used a Mibrasa in its fine dining kitchen for the past three years, but the new model it has gone for is the next size up in the range.

The Brasserie menu boasts an array of British and world cuisine influences, with a special ‘From the Fire’ section dedicated to product cooked in the oven. This includes beef, whole roasted seabass, yellowfin tuna, lamb chops and vegetables.

Sopwell House’s executive chef, Gopi Chandra, said the equipment is a valuable addition to the kitchen.

“The Mibrasa is such a great piece of equipment, this is our second oven in the hotel and this time we’ve made a feature of it on our Brasserie menu and in our new open kitchen. It’s so versatile and extremely well-made.”
