Foodservice equipment provider Ascentia is organising a special ‘Pizza Masterclass’ next week, demonstrating the importance of ingredient selection and best cooking practices on the Moretti ovens it supplies.
The firm will run two separate sessions, on Wednesday 29 and Thursday 30 June, with both taking place at Ascentia’s offices in Cambridge.
“If you own or operate a pizza business or are looking to start a new pizza venture then this is the workshop for you,” said Ascentia’s Neil Mantle, who added that attendees would get the chance to learn from Naples-born Luigi Ricchezza, one of Italy’s most experienced pizza masters and a pizzeria entrepreneur.
He will outline all the techniques an operator needs to know, from selecting the right flour and equipment to perfecting the right proving process and cooking methods.
Both days will kick off at 12.30pm with an introduction, followed by an insight to preparing the flour, cooking and tasting. The sessions should wrap up by late afternoon.
