Adande refrigeration drawers have been the most innovative and useful product for Young’s pub sites.
That’s according to Young’s’ group executive chef, Chris Knights, who has said in terms of the impact and the change the refrigeration units have had in the firm’s kitchens , Adande has helped Young’s to deliver growth.
Speaking at Commercial Kitchen, Knights explained: “ When we were looking at the templates of our kitchens and the kit that was generally used we noticed that there was a lot of empty, dead space sitting underneath chrome griddles and six burner gas rings, for example.
“Refrigeration in some pubs is on a small scale and to even think of getting a blast chiller – that would never happen. So when we discovered Adande three years ago it was definitely a big win for us because it was able to fit into existing cook lines.”
Knights added: “It was universal in the way of it being a blast chiller to help to adhere to food safety standards and to assist during mise en place and service times, and be a fridge and a freezer.”
