Alto-Shaam cooks up ventless rotisserie

Alto-Shaam Electric Rotisserie

The smell and appearance of perfectly browned, succulent spit-roasted chickens turning in a rotisserie can tempt in customers and get their tastebuds tingling.

Now Alto-Shaam is hoping to help operators expand their equipment estates with its new Electric Rotisserie, which it claims cooks faster and more evenly than conventional rotisseries.

The unit’s optional ventless hood means it can go almost anywhere, making it suitable for front-of-house display.

The Alto-Shaam Rotisserie features EcoSmart technology that enables it to use very little electricity to cook a full load of food. It uses a combination of convection and radiant heat to cook up to 28 1.5kg chickens on 7 skewers, while the LED display allows operators to monitor the cooking time and temperature.

The seven programme memory stores cooking and holding times, as well as temperatures, ensuring consistent results every time. The rotisserie wheel and skewers disassemble for simple clean-up.

Once the chickens are cooked the theatre continues as the dual temperature setting automatically switches to hold mode.

The unit can be stacked a matching Hot Holding Rotisserie Companion, as pictured above, which uses a uniform heat source to gently surround the food for better appearance, taste and a longer holding life.

Both items are supplied in the UK by FEM and come with a one-year parts and labour warranty.
