Care home operator HealthCare Management Solutions (HCMS) is aiming to give its residents Michelin star meals by sending its chefs for a training session with culinary expert Brakes Bros.
HCMS kitchen staff attended a Chef Innovation Day at the Brakes kitchen in Covent Garden.
Tony Stein, Chief Executive of HCMS, said: “The comfort and care of our residents is one of our top priorities. It is important that our chefs are not only producing nutritious meals for our residents, but also that the meals look and taste delicious.
“We hope this will be the first of many Chef Innovation Days we host with Brakes Bros, and that our chefs are inspired to cook up a storm.”
Top chef Danny Silcock took the HCMS staff through a specially-designed menu, which included dinner wraps with pureed scone and jam, kedgeree fishcake balls, and granola and yoghurt truffles.
The meals were designed to encourage the maximum calorie intake in the smallest portions to ensure the resident is well fed.
Michelle Lane, Procurement Manager at HCMS, said: “The food was beautifully presented and well-received by the chefs. Danny was very conscious that all residents’ food requirements were met, such as how could we ensure a resident with dementia who enjoys pacing the corridors is getting a balanced, varied, nutritional meal each day?
“The day ended on a high with really positive feedback and the chefs eagerly awaiting the chance to try out the meals they had sampled with the residents.”
