CASE STUDY: Durham college turns to Unox for next-generation cooking control

Two Unox countertop combi ovens are playing a vital role in a new kitchen installation at St. Chad’s College, an independent part of Durham University.

With a dated kitchen in need of upgrade, the college opted for a new system that could help cater for its students and guests within the inevitable restrictions of space and ventilation due to the age of the building.

Two 10 grid electric Cheftop Mind.Maps Countertop Plus combi ovens from the Unox range were chosen to combine installation flexibility with enhanced performance, efficiency and data analytics when compared with other ovens.

Packed with features to support chefs, both Cheftop ovens were installed with integral ventilation hoods which sit outside of the main cookline and ventilation system.

Stuart West, head chef at St. Chad’s College, said the ovens are already proving their value by delivering consistent results at the touch of a button as part of the new kitchen set-up.

“We’re using the ovens all day long, for breakfast, lunch and dinner service with between 100 and 180 diners each time for banqueting and conferences. They’re performing fantastically – everything you would expect from an oven of this quality.”

The college is located next to Durham Cathedral and hosts nearly 400 undergraduate and 150 postgraduate students across a number of buildings.

The Cheftop range of combi ovens includes Mind.Maps technology, which enables Data Driven Cooking for improved efficiency and perfect results.

Aside from touch-screen controls and ready-made cooking programmes from the innovative control panel, kitchen staff can benefit from wireless connectivity to store, share and recall recipes, monitor automatic washing programmes, monitor consumption statistics and download HACCP data.

At St. Chad’s College, the ovens are used for cooking, steaming and regenerating a selection of dishes for wedding receptions, conferences and meetings which are all held in the historic setting.

The Cheftop Mind.Maps Plus can regenerate 51 perfect plates of food at 65°C in 15 minutes, cook whole or split chickens in 43 minutes and steam 80kg of rice in 27 minutes.

It features AIR.Maxi technology, which guarantees intense and uniform air flow on each tray, reducing cooking times and maximising productivity.

Staff can also benefit from SMART.Preheating technology, which creates the ideal cooking conditions using smart technology to automatically set the best temperature and preheating time according to the cooking process. This not only guarantees reliability of results, but energy savings of up to 20% when compared to manual preheating.

The installation was carried out by catering equipment distributor GastroNorth, which is part of the UpNorth Group.
