CASE STUDY: Scotmid picks Rational combi steamers to expand food-to-go offer

Scotmid Co-operative is a community retailer with 188 convenience store outlets throughout Scotland and Northern England.

Alongside the standard supermarket offer, it provides a range of food-to-go, from breakfast rolls to fresh sandwiches, soups, burgers, chicken, baked potatoes and much more besides.

Recently, it launched an evening food-to-go service in five locations, with a menu featuring freshly-cooked pizza and gourmet burgers.

“When we began to plan expanding our food-to-go offer, we soon realised that we would need modern equipment,” explains Danny Scobie, Scotmid’s manager of food-to-go operations (pictured above). “After we reviewed what was out there, Rational was the right choice”.

Scotmid started installing the SelfCookingCenter XS combi steamer in a number of stores, and is now in the process of rolling out Rational’s new iCombi Pro XS, with more locations being added regularly.

The iCombi Pro XS is a compact, multifunctional combi oven capable of replacing the functions of a wide range of traditional equipment.

It can grill, roast, bake, steam, stew, poach and blanch. It has a powerful control system allowing different meals to be prepared at the same time, with sensors monitoring any changes in internal conditions and adjusting automatically to guarantee perfect results every time.

A tabletop unit, with a footprint of only 55.5cm x 65.5cm, it can hold six 2/3 GN pans at once, and is capable of a maximum output of 80 meals a day. This makes it ideal for locations with less space, and multiple units can be stacked using Rational’s Combi Duo system to further expand the overall production capacity.

“They’ve given us great flexibility with our menu, making it far easier to offer freshly-made and baked goods,” says Mr Scobie.

“For example, the Rational XS allows us to prepare pizzas with the kind of finish that you get from a stone-baked oven, or chicken just as if it was deep fat fried — but without the fat!

“They’re very simple to operate, too. The staff love how easy the touchscreen makes controlling it, and the programing we have done gives us consistency across all the stores day in day out!” he adds.

Further time is saved through the Rational combi’s self-cleaning program. “That’s also gone down a treat with the staff,” says Mr Scobie.
