Catering firm Kudos has brought a nutritionist and raw vegan coach into its food development team in a clear sign of how menu trends are changing.
Rochelle Costa joins the business having worked in Malaysia, South Africa and Portugal and will work in unison with chief executive Matthew Herter to influence the recipe and menu design across the business.
She will also be charged with ensuring the company’s food teams continue to embrace and respect the nutritional content of their menus.
Mrs Costa will champion vegetarian, vegan and raw vegan eating and develop and educate the executive chefs and their teams with her masterclasses.
The masterclasses are designed to share recipes and ideas with the team which can be incorporated in to their venues, cafes and daily menus, including healthy food trends, the benefits of superfoods and imaginative plant-based recipes for dietary requirements.
She said: “I’m really excited to be working with the Kudos team. My role is to coach and inspire our chefs to ensure they design balanced menus that are wholesome, healthy and above all delicious. Ultimately I want to educate the team to make healthy living fun so that nutrition continues to play an integral role in menu design across the business.”

Rochelle’s appointment will ensure we continue to offer that same quality to a wider audience and forms part of our overall strategy to make the Kudos experience as ethical, sustainable and relevant to the demands of everyday life as we possibly can.”
Kudos runs a variety of venues and retail outlets across the UK including Penshurst Place and Gardens, Gibson Hall, Central Hall Westminster, John Smiths Stadium and the Brighton Centre.
