Renowned chef David Gale is set to lead the kitchen team at a new site being opened this week by pub multiple Old Rope Walks Limited in conjunction with Star Pubs & Bars.
Mr Gale will serve as executive chef of The Butterfly & The Grasshopper in Liverpool following a £750,000 refurbishment.
His previous positions include group head chef for Selfridges and group head chef for Ian Schrager Hotels.
The menu is based around steaks, mussels and vegetarian and vegan options and is expected to account for 40% of trade.
The Butterfly & The Grasshopper is Old Rope Walks Limited’s fifth site and its third with Star.
The investment has extended the pub over three floors to include a traditional ground floor bar, a new first floor kitchen and a roof garden-style restaurant and a gin and cocktail bar on the top floor.
The business is set on further expansion in the North West and is currently identifying sites in Liverpool and Manchester.
It is interested in freehold and leased period sites that have the potential to be given a distinctive new identity by one of its eclectic design schemes.
