Pub group Young’s, which also counts Geronimo Inns within its burgeoning estate, has completely transformed its kitchens in recent years in response to the more adventurous appetites of consumers.
In doing so, the company, which numbers 250 pubs, has attained a market-leading position in a sector that is changing by the day.
The spark for what happens in many of Young’s kitchens comes from a state-of-the-art food development facility based in Wandsworth, London, where group executive chef, Chris Knights, and his team develop new menus, trial the latest equipment and work on a one-to-one basis with individual pubs. When it comes to investing in new kitchens,
Chris is a firm believer in doing it once and doing it well: “You’ve got to do it properly the first time around, not do it half-heartedly; let’s give [pubs] all the space, all the equipment and everything else they need at the first point and let’s not be afraid to spend the money. We were, and we used to be, but that’s certainly not the case anymore now.”
