Convotherm confident that new generation combis ‘redefine the meaning of premium’

Convotherm has introduced the maxx pro generation of combi steamers.

The appliance includes technologies such as a 10-inch TFT HiRes glass touch display with scroll function, automatic cooking and triple glazing of the oven door for improved energy consumption.

With a philosophy of ‘intelligent simplicity’ the unit’s hardware, functions and software are designed to be easy to use. The features are aimed at solving complex requirements as simply and efficiently as possible, which should also positively impact usage, service and operating costs.

Steve Hemsil, sales director for the UK and Ireland at Welbilt, explained: “For the development of the Convotherm maxx pro, we asked professionals all over the world what they would like from a high-end combi oven. We have incorporated the knowledge gained from this into the planning of the new generation of combi ovens and have been able to develop a high-definition device that is unique and redefines the meaning of premium.

“The Convotherm maxx pro contains many practical functions that follow our maxim of IntelligentSimplicity. Complex challenges become simple and easy to master, as do cost-effectiveness, efficiency and, of course, hygiene. This functionality and resource-saving way of working make the Convotherm maxx pro a modern combi oven that will help make top-class cuisine fit for tomorrow.”

The first is ‘Climate Management’, with the unit including a closed system with ‘Natural Smart Climate’. A custom-fit cooking climate can be set for each product to ensure perfect cooking and baking results.

In addition, energy efficiency has been improved by up to 10 % compared to the previous product.

The second main feature is ‘Quality Management’: smart sensors, routing using ‘AirFlow Management’ as well as an intelligent, customised program-controlled interplay of steam, hot air and time should ensure optimum quality for every item to be cooked and baked.

Third is ‘Production Management’, with intelligent functions designed to ensure that operating the combi oven is simple and clear, even with complex processes. These include Press&Go, which enables automatic cooking with the touch of a finger, an integrated baking and cook book that can be viewed at the touch of a button, and TrayView, which is helpful for mixed loads on a rolling basis.

The final feature is ‘Cleaning Management’. The fully automatic, multi-stage and environmentally friendly cleaning system is approved for unattended operation. Since users never have direct contact with the cleaning agent, gloves are not required for use. Plus a HygieniCare package is designed to provide extra hygiene in the kitchen.

Furthermore there are four options available for the Convotherm maxx pro: ConvoSmoke, ConvoGrill, ConvoServe and ConvoSense.

ConvoSmoke can turn the combi into a smoking oven for both hot and cold smoking, suitable for all catering concepts that smoke themselves without requiring additional space in the kitchen.

With ConvoGrill, users can achieve grilling results without the need for an additional rotary grill. They select Press&Go, choose a cooking profile for the grilled foods and the oven is designed to produce consistent, quality results. Thanks to ConvoGrill’s patented grease management system which uses a sensor-controlled, intelligent pump system to separate excess grease from other cooking juices, operators can now reduce waste, be more environmentally friendly and save time on their waste management procedures.

While ConvoServe enables meals to be prepared in advance, to be ready to serve just as the guests arrive. ConvoServe is suitable for large quantities, buffets, plate banquets or à la carte services. Its sophisticated technical functions are designed to regenerate and finish meals with tailor-made accessory solutions.

Finally, ConvoSense’s artificial intelligence and cutting-edge sensor technology are designed to open up new perspectives in food preparation. This is said to enable efficiency and reliability while being cost-effective by conserving resources.

The Convotherm maxx pro family also includes Bake, which combines traditional baking knowledge with the modern functions of the combi steamer. The ‘Rise&Ready’ fermentation profiles are designed for producing baked goods, and the multi-level baking function BakePro, enables rising for small baked goods, with an optimal crumb and shine. Optimised suction panels as well as baking trays and accessories in the baker’s size of the Convotherm maxx pro should meet the demanding requirements of the bakery trade.
