Devon restaurant group plans wood-fired pizza business

A Devon restaurant business has announced plans to expand by launching a wood-fired pizza concept.

ODE-true food will open ODE&Co at the Coast View holiday park in Shaldon after striking an agreement with South West Holiday Parks which currently operates three sites in Devon and Cornwall.

The site will have room for 120 covers when it opens next year following a wider renovation taking place at the park. ODE&Co will specialise in sour dough pizza cooked in a wood-fired oven from an open kitchen.

The company, which has been heralded for its sustainability ethos, will also offer a take away and delivery service using electric vehicles.

Tim Bouget, owner of ODE, stated: “This is the perfect location for our first ODE&Co and we are very excited about the new project and partnership with South West Holiday Parks. My love of Italian food stems from days working with Stephano Cavalini and Gaulteiro Marchesi in London and provides an opportunity to offer something truly unique but at the same time sharing the company’s sustainable philosophy.”

ODE has a number of stands to its business. It recently opened a second café site, while it also operates the acclaimed ODE dining venue.

Last month it launched ODE on the Road, a pop-up restaurant venture consisting of a wood-fired oven fitted on a vintage trailer (pictured above).

Bouget started the business nine years ago after spending 12 years abroad where he held executive chef and food and beverage posts at boutique hotels in Asia, North America, Africa and the Caribbean. Prior to that he worked in restaurants in the UK for eight years.
