Those that have a firm eye on kitchen efficiency, coupled with a flexible approach to menu development, appear to be showing the greatest resilience and there are many examples of this among the companies and individuals featured over the coming pages.
Last year in this report we referenced the need for speed, efficiency and consistency when it comes to the kitchen equipment specified by the leading players. 12 months on, there is nothing to suggest this has changed.
