Winnow, the hospitality tech firm bringing artificial intelligence (AI) into the kitchen to fight food waste, has appointed David Walker as its new chief commercial officer.
Walker brings with him a wealth of experience in directing and leading growth. He launched the Dyson Airblade hand dryer to the world, leading the Dyson Professional business across Europe and the USA.
He also led Sky television’s commercial sales function, and his own career started from driving worldwide business development for Barclays.
Using a camera, a set of smart scales and the same type of machine learning technology found in autonomous vehicles, Winnow Vision ‘learns’ to recognise different foods being thrown in the bin and calculates the financial and environmental cost of this discarded food to commercial kitchens.
Businesses and chefs can then adjust their food purchasing decisions accordingly, reducing their spending and tackling a fundamental problem of food waste: overproduction.
A typical kitchen would expect to cut food waste in half within a year, saving 3%-8% on food purchasing costs.
The technology has already been rolled out to over 100 sites and is trusted by brands like IKEA, IHG and Emaar Hospitality.
Food waste costs commercial kitchens between 5% and 15% of all food purchased, with some kitchens wasting up to 20% of all the food they buy.
