A former operations chief at Prezzo is to spearhead Thai restaurant group Giggling Squid’s push to ramp up its UK store network.
Peter Morrison, who was previously operations director for Prezzo’s Chimichanga brand, has taken up the same post at Giggling Squid, which operates 13 restaurants, mostly in the south east.
The chain, which is credited with introducing the ‘Thai tapas’ dining concept to the UK six years ago, is aiming to have between 50 and 70 restaurants in the UK within five to seven years.
It is reportedly in discussions to take over five more sites in the Home Counties and one in the Midlands this year, while a new 100-cover restaurant is planned for Bury St Edmunds in Suffolk by the autumn.
Morrison is expected to play an integral role in helping the chain to meet its goals, drawing on more than 25 years’ experience in the market. At Chimichanga he was instrumental in doubling the brand’s store estate.
