FEJ ZOOM: Compass culinary director Nick Vadis discusses life under lockdown

As one of the most diverse catering businesses in the world, Compass Group has had to manage the impact of the coronavirus on a global scale.

While some of its divisions, such as sports and stadia, have naturally seen business come to an abrupt halt, others such as healthcare are playing a vital role in supporting those on the frontline.

In this FEJ Zoom interview (which you can play by clicking on the video above), Andrew Seymour caught up with the company’s UK culinary director Nick Vadis this week for a 20-minute chat.

Normally seen behind the stove in his chef whites, Mr Vadis chatted about the challenges of lockdown for chefs that are used to the buzz of a kitchen, how social distancing could change the way that consumers behave when it comes to restaurants, and what the industry might look like when business returns to its ‘new normal’.
