FEJ TV: Chef Steve Munkley hails food waste system as ‘a way of the future’

Steve Munkley, executive head chef of The Royal Garden Hotel in London has described how the installation of a new waste management system four months ago is changing the game for its kitchen.  

Speaking in the Kitchenology Zone of the Professional Kitchen Show last week, Mr Munkley – who manages a brigade of 60 chefs – said the aerobic digester was safely converting 160kg of food waste a day and had eliminated the need for large tanks of waste to be collected.

Describing it as “a way of the future”, Mr Munkley shared his thoughts on how foodservice establishments can deal with waste.
