FEJ ZOOM: Pub group Brains leaves nothing to chance as it plans how kitchens might look after lockdown

Like most pub groups, the majority of staff at SA Brain & Co have been furloughed as the industry waits to hear when lockdown measures will be eased and the lights can be turned on again.

While the current period remains a waiting game for those currently sidelined, food operations manager Nathan Evans has been hard at work planning what the company’s menu and kitchen proposition could look like when business opens up again.

In this latest FEJ Zoom chat, (which you can view by clicking the play button above), Mr Evans spoke to Andrew Seymour about the food philosophy shaping Brains’ strategy, its commitment to investing in kitchen skills irrespective of the crisis and the challenge of developing new menus during lockdown.
