FEJ ZOOM: TGI Fridays’ Terry McDowell on how its kitchens can thrive under the ‘new normal’

TGI Fridays is hoping that the launch of a Click & Collect service across 24 restaurants is the first step towards its estate reopening again – it’s certainly a move that is set to have a huge impact on the way its kitchens operate in future. 

In this latest FEJ Zoom chat, (which you can view by clicking the play button above), head of food and drink, Terry McDowell, spoke to Andrew Seymour about its journey into the click and collect business, and the implications for kitchen design and workflow.

He also outlines where he thinks click and collect will fit into the chain’s strategy when its restaurants are all open again and whether operating under new conditions will require a revamp of the way its kitchens are configured and equipped.
