HotmixPRO takes centre stage at Sotheby’s kitchen special

Exclusive Ranges and its sales partner for plug-and-play catering products, Pro Foodservice Reps, are teaming up with Italian restaurateur Massimo Bottura for a special event that will see its Hotmix PRO appliance used to whip up a series of unique dishes.

The three Michelin starred chef, whose restaurant Osteria Francescana was recently voted the second best in the world, will bring culinary elements of the famous destination to Mayfair auction house Sotheby’s for a four-day cooking special at the end of this month.

From 27-30 June, Bottura will present a spectacular seven-course tasting menu, inspired by some of the world’s most famous artists, with elements featured on the menu quite literally ‘mixed up’ by the HotmixPRO.

The appliance is highly adept at chopping, mincing, mixing, blending, beating, creaming, liquidizing, whisking and kneading, performing these tasks in up to 16 consecutive stages in a recipe. It can also weigh ingredients and apply accurate temperature control by single degree increments.

Manufactured in Modena, Italy, which happens to be Bottura’s home town, the HotmixPRO is a vital piece of kit in his kitchen at the Osteria Francescana.

Exclusive Ranges claims the appliance is the only thermal mixer on the market that can set such precise parameters that it can cook sous vide, for example, at 60°C for four hours, enable operators to work with sugar at up to 190°C or make ice cream (depending on model).

The HotmixPRO will be utilised at the Sotheby’s event to create dishes including ‘Beautiful Psychedelic Spin-painted veal, not flame grilled’, ‘Oops! I Dropped the Lemon Tart’ and ‘Camouflage: Hare in the Woods’, all inspired by Bottura’s favourite artists, who have provided the motivation for many of his unique creations.
