Refrigerated equipment is an essential component of any commercial kitchen operation and there are always new innovations that can benefit operators’ businesses. FEJ rounds up a selection of some of the most compelling refrigeration products on the market today.
TCR True counter refrigerator
True’s new Counter Refrigerator (TCR) products have been designed to set a new standard for functionality, performance and elegance in the professional kitchen. Available in 2 or 3 sections, fully front-breathing, and with True’s state-of-the-art temperature control, the appliances boast a capacity of 250 litres and an energy rating of A+. The 1/1 Gastronorm counters are highly customisable with any choice of door/drawer combinations, and worktop or undercounter options, available.
In total, there are more than 550 different configurations to choose from, allowing operators to tailor a refrigeration solution to their exact operational requirements. Certified to operate at Climate Class 5, they are robust enough to perform in the most demanding back-of-house kitchen and attractive enough to be situated in any open kitchen environment.
Any location where access to chilled or frozen foods is required or in situations where foodservice operators want the versatility to be able to configure their own counter set-up to meet specific kitchen parameters.
Hoshizaki Snowflake GII HC SCR-225CGRC refrigerated counter
Designed to be a simple, efficient and cost-effective solution, the Snowflake GII SCR-225CGRC is capable of achieving outstanding performance despite its ultra-compact, 4 compartment design. It uses the naturally occurring R290 refrigerant to achieve significantly better performance and lower running costs than existing HFC models, which, as part of the ‘Hoshizaki Eco Plan’, will be phased out.
Designed to work efficiently in even the most demanding kitchen environment, the Snowflake GII SCR-225CGRC refrigerated counter is fitted with the brand’s innovative ‘Tropical Cooling System’, giving the unit a Climate Class 5 rating. This rating means the SCR-225CGRC has been fully tested to ambient temperatures of up to +40°C and relative humidity of 40%. The unit has a capacity of 343 litres.
Locations where free-standing or walk-in units are too big or restaurants with open plan kitchens that need a refrigeration product to slot between kitchen counters without posing as an eyesore.
Electrolux Professional EcostoreHP refrigerated counter
Electrolux Professional’s ecostoreHP refrigerated counters feature both the highest Climate Class 5 rating and the highest Class A energy efficiency rating. Key to achieving these leading classifications is the cabinet’s 90mm thick stainless-steel casing. This houses cyclopentane as the main foam insulating agent, which in turn increases the efficiency of the insulation by more than 20% compared to traditional foaming gas.
An extra level of insulation naturally means less mechanical power is required to maintain the optimum temperature levels, and so the running costs are also kept to a minimum. To deliver further savings, the range also includes a built-in Frost Watch Control — an automatic defrost setting which takes only as long as is absolutely necessary. With a capacity of 310 litres and the use of R290 refrigerant gas, ecostoreHP refrigerated counters are an effective and efficient kitchen solution.
Any foodservice operation that is looking for refrigeration that ticks the box on energy efficiency and provides sufficient capacity, including restaurants, hotels and staff canteens.
Liebherr GKPv 6577 stable door refrigerator
Liebherr’s GKPv 6577 refrigeration unit has a moulded 304 stainless steel interior, self-closing doors with fitted locks, cleaning drain, low noise output at 70dBa and will operate normally in a 40°C ambient temperature. A wide temperature choice is available, ranging from -2oC to +15oC. The GKPv 6577 will cope easily with multiple door openings and is fitted with four strong adjustable stainless steel legs.
Castors can be fitted if required. It also comes with an automatic SuperFrost programme for the rapid chilling of ambient food. The controller features door and temperature alarms with adjustable parameters and will display maximum and minimum temperatures at the push of a button. The GKPv 6577 stable door refrigerator has a capacity of 596 litres and a C rated energy label.
The GKPv 6577 is suitable for busy back-of-house commercial kitchens where temperature stability, food safety and trouble-free operation is paramount.
Precision Refrigeration duck drying cabinet
Increased demand from operators for specialist meat ageing refrigeration products led Precision to launch its duck drying cabinet. It has a 1/4°C temperature range, provides a 40% to 60% humidity environment and comes with three sections of hanging rails and drip trays. Each section can accommodate nine ducks.
Available in a single and double door format, with an easy-to-use digital temperature controller at the top of the unit, the duck drying cabinet is the perfect place to dry ducks in a safe temperature environment. Ducks are often placed on display in a restaurant’s front window to dry naturally, however Precision’s cabinet allows chefs to dry their ducks within the correct refrigerated temperature required to store raw meat, which is more hygienic and safer for the customer.
Any kitchen that serves Peking duck on the menu.
Lincat Blu° chef base
Produced in conjunction with sister company Desmon, Lincat’s Blu° refrigerated chef bases allow operators easy access to stored, chilled food at the point of cooking. Designed to accommodate heavy duty Opus 800 series equipment such as chargrills, griddles and induction hobs, the unit has self-closing, heavy duty drawers capable of holding 1/1 GN 100mm-deep containers, providing convenient bulk storage for meat and fish.
The Blu° chef bases are powered by a three-pin plug, therefore requiring no installation, and are available in widths of 800mm, 900mm and 1200mm. For ease of cleaning, the units have removable drawers, rounded interior corners and removable rubber magnetic door gaskets.
ISA display cabinet
At only 80cm deep, the Delta purports to be the slimmest ice cream, gelato and sorbet display cabinet with ventilated refrigeration on the market. UK supplier Taylor says its compact size means it is easier to install than competitor models, since it can be sited in narrow spaces and fits through a standard door.
It has side to side air flow, rather than front to back, and can offer two separate temperature zones so that milk gelato (ideal storage temperature -14°C) and sorbet and water gelato (-18°C) can be stored in the same cabinet, with no compromise on quality. A special mode prevents the cabinet from running its defrost cycle during the night, ensuring that the product stored is preserved as perfectly as possible. The cabinet has the capacity to hold 12 standard five-litre Napoli containers.
