Kitchen fit-out and pizza oven install at centre of ambitious pub operator’s £500k refurb

Midlands pub operators Andrew Twigg and Mark Hynett of Proper Pubs have taken on the Star Pubs & Bars lease for The Swan in Warwickshire and are undertaking a joint £500,000 refurbishment with the company with the intention of creating the best pub in the area.

This latest addition is their second pub – the other being The Plough in Lichfield, which they took on in 2015 and transformed into a destination food pub. Mr Twigg also runs The Sun on the Hill in Birmingham.

Over next five years, Proper Pubs plans to add a further five West Midlands pubs to its portfolio of destination food pubs.

The Swan will close at end of service today and reopen in early March in time for Mother’s Day. Over 20 new jobs are being created on the back of the changes.

The refurb project will include a full commercial kitchen fit-out to allow the pub to cater to more diners as well as the installation of a large woodburning pizza oven in the centre of the dining area, where fresh pizzas will be prepared and cooked.

The menu will feature traditional pub favourites with a modern-day twist, great steaks, pasta, burgers and salads. Additionally, it will provide freshly prepared pizzas baked in the wood fired pizza oven and a Sunday lunch. At weekends it will open for breakfasts.
