Elsewhere in the edition we take a look behind the scenes at Heston Blumenthal’s Perfectionist’s Cafe at Heathrow Airport and discover why its choice of equipment has played such a key part in the venue’s success.

As chef manager, Julian O’Neill, points out: “We can’t afford to have equipment that cannot take the strain of such a high number of covers, seven days a week.”

We also catch up with BaxterStorey, one of the country’s biggest caterers, on the subject of sustainable kitchens. It believes that a failure to properly plan ahead is preventing companies from taking advantage of the latest energy efficient catering equipment and instead forcing them into impulse purchases.

Operators looking to get a flavour of new equipment trends will find our feature on pizza ovens a fascinating read.

Good quality pizza can fetch a premium these days, making it vital for restaurants to source ovens that are fit for purpose and fit their business model. Leading experts in this category reveal what buyers need to know.
