MARKET TALK: Italian restaurants, supplier empathy and hopes for 2021

This week’s episode of Market Talk is the final one until next year and we end on a high by welcoming Marcello Distefano, managing director of San Carlo Restaurant Group and Jared Greenhalgh, business development manager at Panasonic UK, to the show. 

San Carlo Restaurant Group currently numbers 21 restaurants across the UK and five overseas, and has grown to become a £60m empire renowned for its fresh ingredients and authentic Italian cooking principles.

Mr Distefano – whose father founded the business in 1992 when he opened his first eponymous restaurant in Birmingham – shares the lessons he has learned in the past nine months and discusses why being a family business with a lean structure has allowed it to navigate every obstacle thrown at it so far.

Mr Distefano also outlines why he thinks the company’s culinary model is preferable to centralised production kitchens, the growing role that sustainability has to play in future kitchen purchasing decisions and the launch of a new concept close to Selfridges in central London.

Jared Greenhalgh oversees Panasonic’s professional cooking division, which features a wide range of commercial microwaves and accelerated ovens. He reflects on the challenges that this year has thrown up and its impact on manufacturer and operator relationships, as well as the trends impacting the type of cooking equipment that customers are purchasing.

Mr Greenhalgh also details what it’s been like working for a such a well-known multinational corporation during a global pandemic and how the company is making preparations for a rebound in 2021.
