Sodexo has strengthened its commitment to remove single-use plastic items from its operations by making available only wood, paper, cardboard or fibre-based take-away bags, straws, plates, cutlery and stirrers.
Mr Mussett explains how the business is implementing this across the hundreds of foodservice sites it serves and the challenges of sourcing sustainable alternatives.
As one of the largest operators of central kitchens and big kitchen facilities, he also reveals which other areas he expects to occupy his time this year and the sort of solutions he is looking for from suppliers.
Meanwhile, Mr Kapembwa outlines why catering equipment suppliers and buyers need to start thinking about the circular economy if they haven’t already, particularly as the industry’s understanding of sustainability increases.
