Mr Trollip has been overseeing the day-to-day operations of Dishoom for 10 years now, but this year has been completely unprecedented in terms of the obstacles it has presented. He reflects on the lessons that the Bombay-inspired chain has learned and the most important aspects that underpin its kitchens.
Dishoom was also due to launch a restaurant in Birmingham just as lockdown hit – Mr Trollip discusses how it dealt with the blow of such a major project being put on hold and its aspirations for the future.
Meanwhile, Mr Palin outlines how Filta Group used the lockdown to double down on new product development, including the introduction of the FiltaShield sanitisation service. He gives his view on the steps that restaurants can take to hygienically safeguard their environments and maintain the guest experience.
