MARKET TALK: Making kitchens Covid-safe, trialling new recommendations and keeping the fun in hospitality

In this week’s episode of Market Talk, Peter Jarrett, director of Gaea Educational Systems and David McKown MBE, Head of Training and Quality, Accommodation and Commercial Services at The University of Sheffield, join us for a special discussion on how kitchens can operate safely post-Covid-19.

Mr Jarrett is a published specialist in food systems including the supply chain and food safety, as well as being the author of the City & Guilds Food Safety Training Manual.

During the lockdown, he has compiled recommendations and learning resources that are specifically designed to help operators work safely with the correct social distancing practices and methods to protect team members and customers.

The body of work that he has produced is now being trialled by Mr McKown and his team at the University of Sheffield.

Mr McKown – who is also a prominent member of the Craft Guild of Chefs and created the internationally-renowned Skills for Chefs Conference – describes how the recommendations and principles will be applied within university hospitality settings and the challenges in adapting to the new constraints that the industry faces.
