Mitchells & Butlers has saved 500 pieces of kitchen equipment from being condemned by refurbishing them to use in new projects.
The pub and restaurant operator said the re-deployment of kit that can still fulfil an operational purpose would help it to become a greener business.
Over the past year the company has given greater consideration to the environmental impact of its investment programme and, where possible, it has refurbished existing kitchen equipment and furnishings to be used in new projects.
In so doing it has prevented 500 pieces of equipment from being sent to landfill, which equates to 274m³.
Bosses at the chain, which numbers 1,750 sites, said it was “increasingly supporting” innovative companies that can offer it sustainable industry solutions, as well as working collaboratively with other organisations in the sector to share learnings and best practice in addressing the environmental challenges it faces.
Food waste has been another major focus area for the company, with the centralisation of procurement and stock management allowing it to reduce the level of surplus food in its supply chain during the year.
A product and pack size review has led to 65% reduction in food waste compared to the year before, while M&B has begun working with FareShare, which takes unavoidable waste from its supply chain and distributes it to charitable organisations which aim to bring people together through food and social interaction.
Investment in a more sophisticated stock management system is designed to reduce food waste further, while it is exploring opportunities to redistribute food from sites when it has a surplus and it has trialled the ‘Too Good to Go’ app in Toby Carvery.
Mitchells & Butlers’ estate comprises 1,748 pubs, bars and restaurants. It has completed 240 remodels and conversions in 2019, compared with 232 last year, and remains on course to deliver a 6-7 year cycle of investment, from the 11-12 year cycle of previous years.
A focus on eliminating profit drag by reducing closure time and a more efficient use of resources has seen return on investment for conversion and acquisition projects increase to 21% this year, the strongest the business has seen for many years.
Remodel returns have also improved, increasing to 34% for projects completed in the financial year.
Meanwhile, nearly 300 M&B sites now offer delivery through its partnership with Just Eat and Deliveroo. It also has three delivery-only brands in trial, utilising existing kitchens where it has additional capacity.
