The pizza market is inhabited by some established names but Franco Manca’s small footprint kitchens and shrewd business model have allowed it to go toe-to-toe with the biggest brands and emerge victorious.
Nabil Mankarious, managing director of the sourdough pizza specialist’s parent Fulham Shore, which also owns The Real Greek, is a veteran of the casual dining market and he believes there is no limit to the number of sites that it can add to the 36 it already operates.
“Franco Manca can operate from smaller spaces — from 1,000 sqft on a ground floor, sometimes less — and therefore we can occupy places that a lot of other restaurant chains can’t,” he says. “If you compare us on a pizzeria level, we are in the market competing for sites against Pizza Express, Zizzi, ASK. All of those guys require 2,500 to 3,500 sqft.”
While the company has built its success on opening stores across London — a further three stores are due to launch in the capital before the end of the year, in fact — it has diversified regionally, into places such as Brighton and Guildford.
Additionally, it has commenced trials with Deliveroo, offering Franco Manca pizza on a delivered basis, and it looks set to extend this arrangement to more stores following an encouraging start.
