The pizza market is inhabited by some established names but Franco Manca’s small footprint kitchens and shrewd business model have allowed it to go toe-to-toe with the biggest brands and emerge victorious.

Nabil Mankarious, managing director of the sourdough pizza specialist’s parent Fulham Shore, which also owns The Real Greek, is a veteran of the casual dining market and he believes there is no limit to the number of sites that it can add to the 36 it already operates. nabil-mankarious-person

“Franco Manca can operate from smaller spaces — from 1,000 sqft on a ground floor, sometimes less — and therefore we can occupy places that a lot of other restaurant chains can’t,” he says. “If you compare us on a pizzeria level, we are in the market competing for sites against Pizza Express, Zizzi, ASK.
