Pantheon has launched two new sous vide water baths and three chamber vacuum packing machines in response to increasing demand for this method of cooking.
The 8-litre SV1 water bath and the larger, 20-litre SV2 water baths are designed to be highly accurate and easy to use. Each has a LCD display that shows water temperature, remaining cooking time and alerts the operator to low water levels. A touch pad control makes the units simple to programme.
Given that foods cooked sous vide need to be sealed, the company has also introduced a series of chamber-style vacuum packing machines. These create a vacuum in the machine’s cavity rather than simply in the pouch itself, meaning the systems can be used for a wider variety of foods and liquids, too.
Pantheon’s trio of chamber vacuum packing machines comprise one countertop model and two floor standing models, all with cycle times of between 10 and 25 seconds.
