When Tesco offloaded its Giraffe restaurant brand and Harris + Hoole coffee chain last year it would have been easy to interpret it as a sign of the supermarket giant’s desire to exit the foodservice arena.
But in actual fact, nothing could be further from the truth given that it operates almost 500 Tesco Cafes at stores around the UK. In unit terms that makes it one of the largest operators in the industry.
This division of the company is run by Adam Martin, who is overseeing a huge upgrade programme that has included significant investment in new kit, including Merrychef ovens and Eversys coffee machines.
By the end of the year Tesco is likely to have refurbished 100 cafes. “It is probably one of the most ambitious roll-out programmes in the UK eating and drinking out industry at the moment, and a big part of what we spend is on kitchen equipment,” he says.
Tesco’s in-store catering market strategy is based around promoting service and speed, and in order to do that it needs equipment that can be worked hard and operated easily.
“It is about finding the product quality and the reliability, and using labour efficiently, but the agility of the equipment matters massively, too,” he concludes.
