The field in which Byron has made its name is getting increasingly competitive with each year that passes.
But bosses at the firm remain confident that the “quality” of its offer sets it apart from rivals and, following the departure of founder Tom Byng, have moved to bring in the executive firepower to safeguard its position.
Simon Cope knows the market inside-out from his time at Wagamama and his experience is proving invaluable to the chain as it looks to embark on the next stage of its evolution. Simon was global brand director at the Japanese casual dining giant and is credited with playing a significant role in the turnaround that led to it posting double-digit like-for-like growth over the last three years.
Since taking up the role, Simon has got stuck into some of the key pillars of Byron’s strategy, including marketing, food development and property.
“As the pioneers of proper hamburgers in the UK, Byron is uniquely well-placed to take advantage of the significant growth opportunity that exists for premium brands in the UK’s casual dining market,” he says.
Simon will be looking to build on last year’s success, when Byron grew its restaurant estate by 13 units to 65 and increased sales to £80m.
