Having joined Nando’s from supermarket giant Waitrose last year, Adele Hing has brought a fresh pair of eyes to the operational side of the 400-strong restaurant chain.
Her remit has involved exploring new equipment and devising the kind of kitchen blueprints that will keep the company, which now makes UK sales in excess of £800m a year, at the vanguard of the British casual dining scene for the foreseeable future.
For a chain that is present in all sorts of locations, from high streets to shopping centres and airports, every kitchen project brings its own set of challenges shaped exclusively by the footprint of the building, but Adele and her team have worked hard to bring a degree of modularity to the equation to ensure maximum roll-out success.
All of this has to be achieved with one eye on design given that the theatre which its grills create is an important part of the peri peri chicken specialist’s engagement with walk-in diners.
“Customers can see pretty much everything in our kitchen from whichever angle they are looking at. But for me it is also about finding the balance between the theatre and the look of it and the functional side of it — it has got to make the operation work,” says Adele.
