You need the right mix of operational pedigree and executive management skill to prevail in the foodservice market and in Jake Bishop, Bristol-based cafe chain Loungers has certainly got a man who possesses both.

Jake is one of the three co-founders of a business that turned over almost £70m in its last financial year and he has a hands-on role in the culinary side of the business after a recent management restructuring to prepare the company for its next growth stage. Jake Bishop portrait (left)

With the appointments of two brand managers instead of a single COO, Jake (who was previously Cosy Club managing director) now assumes the newly-created post of group commercial director.

This all-encompassing role gives him an opportunity to influence what’s happening on the frontline and provide assistance in the day-to-day running of the chain’s 84 stores.

He oversees product and menu development, people and training, as well as operations support.

Loungers boasts a regional operating structure that has been honed as the estate has grown, with the culinary side of the business strengthened by the hiring of a head of food, success in terms of trialling menu changes and added focus on back-of-house systems.
