Fast-casual restaurant chain Tortilla continues to make a name for itself having opened up its 34th site this year.
The Californian-themed burrito and taco restaurant brand has won admirers for its fresh ingredients and healthy alternative to Mexican fast food, with the consistency and quality of its kitchens intrinsic to its success.
The man responsible for its growing kitchen fleet is head of food Martyn Clover. As he notes, many of its sites sell hundreds of burritos and tacos each day and the first has to taste as amazing as the last.
“Our kitchens all have top quality rice cookers as well as combination ovens which are very versatile and enable us to have specified cooking programmes to produce the very best quality product each and every time.
Many stores also have flat-top grills to allow for perfectly chargrilled meat each and every time,” he explains.
Part of Martyn’s focus this year has been looking at what new technology is out there and ensure that every bit of kit earns its space in the kitchen.
“It’s all about flow and making sure not only that equipment is in the best spot to reduce unnecessary movement between stations but also that there is sufficient room for our guys to use it correctly and safely. A kitchen is all about functionality and ease of use.”
