As head of sustainable business for the UK’s largest independent service provider, Mike Hanson’s role enables him to make a true difference to the business and the wider foodservice landscape.
There are many caterers around that deliver fantastic food in huge volumes cooked by highly skilled chefs, but few do so in a way that espouses the environmental pedigree for which BaxterStorey has become known for.
This is in no small part down to Mike’s efforts as he has flown the flag for sustaining local supply chains, minimising kitchen waste, slashing energy usage and driving down the company’s carbon footprint.
Mike takes a close interest in the efficiency of BaxterStorey’s catering equipment estate and when you consider that it employs 8,500 staff across more than 600 locations it is a sizeable task.
But he is willing to use every tool available to him, as illustrated when he deployed the ‘CaterOps’ software system at a large client site in Bristol to gain an accurate picture of its catering equipment inventory and energy usage.
This move proved inspired in terms of helping the on-site team identify how levels of production affect the energy consumption of appliances and establish where efficiencies could be made.
