As one of the fastest growing food concepts in the US, MOD Pizza is now bidding to “disrupt” the UK pizza scene with its ‘super fast’ pizza experience.
Customers can build their own individual, artisan-style pizza or salad using fresh-pressed dough and a choice of 34 toppings, and regardless of how many toppings they choose, the price is always the same.
Having established its first half a dozen sites, the company is now looking to push on with more locations around the UK.
John Nelson is the man tasked with making that happen and he knows a thing or two about scaling restaurant businesses — he previously served as operations director of Nando’s during a period when it went from 90 stores to more than 200.
Although MOD’s kitchen model and equipment lay-out is styled on its US business, John was instrumental in sourcing Gozney ovens to supply the pizza ovens for the UK branches — a vital task given they are the workhorse of the business.
“It was important for me to find someone who knew what they were talking about and could do things at pace given our plans for expansion. When you are a new company in the market you want flexibility from a supplier and Gozney was able to offer that,” he explains.
