Family-run hospitality group Anglia Country Inns has carved up a nice little niche for itself in the regional pub market since opening its doors 20 years ago.
Its seven establishments across Norfolk and Hertfordshire have all picked up awards for various achievements as the business has stayed true to its roots of delivering good food and proper old-fashioned hospitality.
While no two places in the group’s estate are identical, you’ll find the same attention to detail is put into every element of its business, from the way chefs prepare fresh lobsters to the techniques they use to roll pizza dough.
Group executive chef, Kumour Uddin, is responsible for upholding the values that are central to the chain’s food and beverage offering, and he’s clear that a rounded approach to kitchen success is the order of the day.
“You can have the best equipment in the world but if you have a very badly designed menu it will never work,” he said at the Commercial Kitchen show this year.
Kumour’s role involves matching specific equipment to specific sites but he acknowledges that as demand grows, so too does the need to invest in even better equipment to cut cooking times and improve efficiency.
“Getting consistency through equipment is the aim of the game in our industry,” he says.
